Whole Fenugreek SeedFrom: $1.05
Fenugreek is used as a common food ingredient (curries, chutneys, etc.) and traditional medicine in many parts of the world, including India, Greece, China, north Africa and the Middle East. It is a basic ingredient of curry powder and the Five Spice mixtures.
How to Use:
Whole Fenugreek is the source of curry powder’s distinct aroma. When raw or overcooked, fenugreek turns bitter; to moderate its faintly bitter taste, fry or toast first. Simmer with lamb curries and lentils; fry with greens (especially spinach) and full-flavoured vegetables such as cabbage; brew into herbal teas, or add to chutneys.
Whole Star AniseFrom: $2.79
Star anise is the fruit of a small evergreen tree native to southwest China. The star-shaped fruits are picked just before ripening and dried before use. They contain the same essential oil as the botanically unrelated Spanish anise seed, which gives the two a nearly identical flavour – strong, sweet, and licoricey. Whole, perfect Star Anise are really quite a beautiful wonder of nature, with eight points and a seed in each point.
How to Use:
Whole star anise is used to flavour tea, marinades, casseroles and soups. It is integral to the traditional Vietnamese soup ph and is used in many other Chinese and southeast Asian dishes. Star anise is warming and therefore can be combined with coriander, turmeric, bay leaves and cumin. If you bite into a star anise, you will have an intense but unpleasant burst of flavour in your mouth. It is best to enjoy the delicate flavour that has been infused by this beautiful spice.

Wild Kakadu Plum PowderFrom: $23.79
Kakadu Plums are a small green fruit native to the Kakadu and Kimberly regions, that have been utilised by Indigenous Australians as a food source for more than 40 000 years. This powder is produced from fruit grown in wild bush orchards on the Dampier Peninsula (North of Broome, W.A.) that are completely free from chemical contamination. It is harvested by the Nyul Nyul people, who call it Gubinge, as part of a successful ongoing land regeneration and management plan. To make a soothing winter brew that is reported to relieve cold and flu symptoms, gently simmer fresh ginger and turmeric in coconut milk with a little cinnamon and black pepper, till reduced by a ⅓. Strain and let cool to below 60 C, before adding up to 1 teaspoon (to taste) of Kakadu Plum powder. For a cool alternative, serve chilled as a Summer refresher.
