  • Raw Organic Cacao Powder

    Cacao powder is made from the finest cacao beans and has a decadent and full-bodied chocolate flavour. The beans are extracted from the inside of the Cacao fruit which contains both the beans (seeds) and a white pulp. The beans are separated from the pulp and left to ferment for 5-6 days. After fermentation, the beans go through a drying process below 40C.

    The Cacao Beans are then husked and ground to produce Cacao Paste. During this process, part of the Cacao Paste is pressed to separate the Cacao Butter from what is now called the Cacao Cake. The Cake is then pulverized to become Cacao Powder.

    How to Use:

    Enjoy cacao powder in hot chocolate, smoothies and brownies, or top your dessert with an elegant dusting of this fine powder. Cacao is a very popular ingredient in raw food and cakes. For a cup of hot chocolate, mix half to one teaspoon of cacao into a smooth paste with a little cold milk. Add hot milk while stirring briskly.

  • Wild Kakadu Plum Powder

    Kakadu Plums are a small green fruit native to the Kakadu and Kimberly regions, that have been utilised by Indigenous Australians as a food source for more than 40 000 years. This powder is produced from fruit grown in wild bush orchards on the Dampier Peninsula (North of Broome, W.A.) that are completely free from chemical contamination. It is harvested by the Nyul Nyul people, who call it Gubinge, as part of a successful ongoing land regeneration and management plan. The fruit has been dried at 40 C for 16 hours and then milled to a powder.

    To retain Kakadu plum powders’ nutrient level it is best used in cold or raw recipes. Sprinkle over your breakfast cereal and chia pudding. Add to your favourite super smoothies or stir one teaspoon into a glass of water or juice for a great immune boost.

    To make a soothing winter brew that is reported to relieve cold and flu symptoms, gently simmer fresh ginger and turmeric in coconut milk with a little cinnamon and black pepper, till reduced by a ⅓. Strain and let cool to below 60 C, before adding up to 1 teaspoon (to taste) of Kakadu Plum powder. For a cool alternative, serve chilled as a Summer refresher.
