A wheat free Super Loaf mix that has been blended to be suitable for use in most recipes that require wheat flour. This natural free-flowing mix of Organic sorghum, tapioca and buckwheat flours already contains rising agents and is ready to use in all areas of cooking and baking where self-raising flour is called for. It also contains delicious flax meal, chia seeds, psyllium husks, Himalayan rock salt and slippery elm powder. Wheat Free Super Loaf has a subtle flavour and aroma. It contains no artificial additives or preservatives and is non GMO.
 


 

How to Use:

This is a versatile and conveniently pre-blended Wheat Free Super Loaf mix can be used for to make a variety of loaves from sweet to savoury. Before making your dough, pre-heat oven to 180°C and prepare a loaf tin. To make a plain loaf combine 2 tbsps. apple cider, 4 tbsps. olive or sunflower oil, 1 medium apple (chopped or grated), 2 eggs (optional) and 3/4 cup of water, in a blender or processor until smooth.

Add 400g of Loaf pre-mix and blitz for 2 seconds until just incorporated, finish stirring quickly by hand if needed. Over-mixing can result in a dense hard loaf. Transfer immediately to loaf pan and bake for 45-50 minutes. Allow to sit for 15 minutes before slicing. Slices best once fully cool, suitable to freeze after slicing. The apple in this basic recipe makes for a lovely moist loaf, and can be replaced with other fruit or grated zucchini.

For banana bread, simply replace apples with 2 large bananas and 4 Medjool dates, adding 3 tsps. of cinnamon and ½ tsp. of nutmeg or allspice. An Olive & Herb loaf can be made by adding 4 cups of sliced olives, 1 tsp. of dried basil or parsley and 2 tsps. of rosemary or thyme, to the Plain Loaf recipe. Any number of variations can be made using the basic recipe with 400g of Super Loaf mix.
