    Vegetable, Quinoa and Chickpea Salad 

    Vegan • Gluten friendly

    Serves: 2-3


    1. Preheat oven to 200ºC. 
    2. Place sweet potato and carrots on a greased baking tray. Drizzle with olive oil and season with salt and pepper. Toss to coat well. Bake for 30-40 mins or until golden. Remove from oven and allow to cool. 
    3. Once cooled, toss quinoa, veggies, almonds, nutritional yeast, herbs and lemon juice in a bowl. Season to taste with salt and pepper. Drizzle with olive oil.  
    4. Top salad with sesame seedsServe & enjoy!
