225g coconut oil or unsalted butter softened
1/2 cup brown sugar or organic rapadura sugar
2/3 cup organic maple syrup
2 1/2 cups organic unbleached plain flour (and extra for rolling)
2 tsp ground ginger
1 tsp ground cinnamon
1 tsp Bi-Carb soda
Preheat oven to 160C.
In a large bowl combine butter/oil, sugar, maple syrup, ginger and bicarb.
Sift in flour slowly and mix until just combined.
Remove mixture out of the bowl and knead on a floured surface. If the mixture is too soft, add a little more flour (or refrigerate). If the dough is quite crumbly, keep kneading to bind further, add a touch of maple or water to assist creating a formed dough.
Roll out dough to 5mm thickness and cut with shaped cutter or cup. Note: You can cut small half-moon shapes with the use of a shot glass or similar.
Bake in batches for around 8 minutes on a greased (we used coconut oil) cookie tray. Be cautious not to overcook.
Cool on a wire rack and decorate if desired. Enjoy!
