Preheat fan-forced oven to 180°C.
1Prepare baking tray. Add cauliflower, capsicum and pumpkin and drizzle with olive oil. Bake for 25 – 30 minutes.
2While the veggies are baking, cook the quinoa and chickpeas.
3To serve, assemble quinoa, roasted pumpkin, cauliflower, capsicum and chickpeas in a bowl. Top with avocado, goats cheese, a squeeze of lemon and an extra drizzle of olive oil.
