Melt coconut butter in a double boiler or microwave.
1Add honey and stir or whisk to combine.
2Add lemon juice and zest and mix again.
3Add the desiccated coconut and stir to combine. The mixture will thicken. It shouldn’t be too wet or sticky, add a little more coconut if needed.
4Stir in the goji berries and put the mixture into the freezer for 5 minutes. This will make the mixture firmer and easier to manage.
5Use your hands to roll half to teaspoon size balls. Tip: use damp hands to roll the mixture.
6Store in fridge or freezer.
