Let sit for a few minutes to allow the coconut sugar to dissolve. Add the egg and vanilla powder. Stir until combined. Add the spelt flour, baking powder and salt. Stir until just combined, then fold in chocolate buttons. Using a cookie scoop or spoon, form the dough into 15 – 20 balls. Press a few more chocolate chips into the top of each ball. Cover and refrigerate for 1 hour. Preheat oven to 180°C and place chilled dough balls 2 inches apart on prepared biscuit tray. Bake for 8 – 10 minutes until the edges are just set. Let the cookies cool for 10 – 15 minutes before moving onto a wire rack to cool completely. PT20 minutesM
