Cook pasta in a pot of boiling water until al dente. While pasta is cooking, in a large saucepan add the olive oil and onion, cooking until translucent. Add the mushrooms and cook for 5-6 minutes until browned. Remove onions and mushrooms from pan and set aside. Cook the chicken pieces until browned. Add the onions and mushrooms back into the pan, then add the milk, cream and French onion seasoning. Stir until combined. Simmer for 5-6 minutes until the sauce has slightly thickened. Add the spinach and pasta, then mix well until evenly coated in sauce. Transfer pasta mix into a large oven safe dish and top with grated cheese. Bake for 20 minutes or until golden on top.
