Add the spices and fry off for 1 minute. Add the diced tomatoes, vegetable stock, salt and pepper and simmer for 10 minutes, and sauce the thickens. Add the cooked chick peas, spinach and lemon juice and stir until combined and cook until warmed through. Serve with cooked couscous or your favourite wholegrain, and if you wish, sprinkle with crumbly feta or coconut yogurt. PT20-30M
