In a large saucepan, heat the olive oil and saute the onion and garlic for a few minutes, until fragrant.
1Add the spices and fry off for 1 minute.
2Add the diced tomatoes, vegetable stock, salt and pepper and simmer for 10 minutes, and sauce the thickens.
3Add the cooked chick peas, spinach and lemon juice and stir until combined and cook until warmed through.
4Serve with cooked couscous or your favourite wholegrain, and if you wish, sprinkle with crumbly feta or coconut yogurt.
