Combine boiling water with chamomile tea flowers, lemon myrtle and black pepper. Allow to steep for approximately 8 minutes. Strain, then add honey and stir. Refrigerate.

Place the naked ginger and lemon juice into a pitcher or jug and muddle by mashing the ginger against the sides using a muddler or the handle of a wooden spoon.
2Add a generous amount of ice to the pitcher and a few lemon slices. Pour the tea mixture into the jug and stir.
Serve in tall glasses with lemon slices and naked ginger.
