Heat coconut oil in a large frypan over medium heat until sizzling. Add bacon, shallots, peas, beans and carrot and cook, stirring frequently, for 3–4 mins or until lightly cooked. Add rice and cook for 5 mins, stirring. Stir through tamari and cook for another 2 mins.1
Move rice mixture to one side of pan and pour in egg. Let it cook for 30 secs, scrambling with fork, then mix through rice and serve straightaway.
