Rinse soaked chickpeas. In a medium saucepan cover with water and cook until tender, about 1 hour, drain.
1In a food processor or blender, add tahini and 1 half lemon juice and blend until light and creamy.
2Add garlic, olive oil and salt. Blend to combine.
3With the processor running, slowly add chickpeas, stopping to scrape sides occasionally.
4If the mixture is too thick, add a little cold water until you reach your desired consistency.
Add additional lemon juice to taste.
5Serve topped with additional olive oil, paprika, fresh herbs and olives (optional).
