One of our favourite ways to cook chicken is in a slow cooker because the meat falls off the bone and the flavour intensifies deliciously! Be sure to keep the chicken bones so you can make some healing chicken broth with them.

Set slow cooker to high and place lemon pieces, onion and garlic in base of slow cooker. Set aside while you prepare chicken.
1Butterfly chicken if necessary, then place in slow cooker on top of lemon, onion and garlic.
2Drizzle over olive oil and sprinkle olives, sea salt, pepper and cumin seeds.
3Cook on high for 3½ hours, checking after 3 hours.
4Preheat oven to 220°C and remove ceramic dish from slow cooker. Remove lid and position lemons on top. Place in oven and cook for a further 20-30 mins, until surface is golden and slightly crispy.
5Remove chicken and place in a large pot. Serve with fresh salad greens, cooked organic Basmati rice or sweet potato mash.
