Set aside while you prepare chicken. Butterfly chicken if necessary, then place in slow cooker on top of lemon, onion and garlic. Place in oven and cook for a further 20-30 mins, until surface is golden and slightly crispy. Remove chicken and place in a large pot. One of our favourite ways to cook chicken is in a slow cooker because the meat falls off the bone and the flavour intensifies deliciously! Be sure to keep the chicken bone so you can make some healing chicken broth with them.

Set slow cooker to high and place lemon pieces, onion and garlic in base of slow cooker. Set aside while you prepare chicken. Butterfly chicken if necessary, then place in slow cooker on top of lemon, onion and garlic.
