I made this Raw Vegan Key Lime Pie last week! It's delish! It is gluten, dairy & refined sugar friendly! The taste actually reminds me of the Raw Macadamia & Lime Cheesecake but its much cheaper to make. It's super easy, I've been keeping it in the freezer and I grab a slice when I feel like a treat (let it defrost for about 10-15mins) . Taste the filling mixture once yourve blended it all and adjust it to taste - I added lots more lime and a bit more sweetener (I used agave as that is what I had).
Oh and by the way almost all of the ingredients can be purchased from our online store!

Grease a springform pan with coconut oil and place the base mixture in pan. Use the back of a spoon to spread out the base.
2Add the remainder of the filling ingredients and blend until well combined.
4Pour on top of base and place in the freezer to set for three hours.
5When serving, cut a few slices of lime to put on top as well as some cute flowers to give it a pop of colour!
