Juice of one lime 3 ripe avocados ¾ cup rice malt syrup (or maple syrup) 2 ½ tsp of vanilla extract The zest of one lime ¼ cup of coconut oil For the base, place all of the base ingredients in a blender until dough like consistency is reached. Grease a springform pan with coconut oil and place the base mixture in pan. Use the back of a spoon to spread out the base. For the filling, place only the cashews into the blender and blend until smooth. This may take a few minutes. Add the remainder of the filling ingredients and blend until well combined. Pour on top of base and place in the freezer to set for three hours. When serving, cut a few slices of lime to put on top as well as some cute flowers to give it a pop of colour! PT40M

Raw Vegan Key Lime Pie – Dairy and Gluten Friendly

I made this Raw Vegan Key Lime Pie last week!  It's delish!  It is gluten, dairy & refined sugar friendly! The taste actually reminds me of the Raw Macadamia & Lime Cheesecake but its much cheaper to make.  It's super easy, I've been keeping it in the freezer and I grab a slice when I feel like a treat (let it defrost for about 10-15mins) .  Taste the filling mixture once yourve blended it all and adjust it to taste - I added lots more lime and a bit more sweetener (I used agave as that is what I had).

Oh and by the way almost all of the ingredients can be purchased from our online store!
