In a large saucepan, saute the olive oil, coconut oil, onion, garlic and ginger for 5 – 8 minutes, until fragrant and translucent.
1Add the red lentils, tomato passata, canned tomatoes and water. Simmer for 15 minutes.
2Add the coconut milk, stir through and cook for a further 3 – 4 minutes.
3Serve topped with fresh coriander.
