Stir together coconut sugar and coconut oil. Let sit for a few minutes to allow the coconut sugar to dissolve.
1Add the egg and vanilla powder. Stir until combined.
2Add the spelt flour, baking powder and salt. Stir until just combined, then fold in chocolate buttons.
3Using a cookie scoop or spoon, form the dough into 15 – 20 balls. Press a few more chocolate chips into the top of each ball.
4Cover and refrigerate for 1 hour.
5Preheat oven to 180°C and place chilled dough balls 2 inches apart on prepared biscuit tray.
6Bake for 8 – 10 minutes until the edges are just set.
7Let the cookies cool for 10 – 15 minutes before moving onto a wire rack to cool completely.
