The perfect recipe to make use of those overripe bananas, this banana bread with maple butter is sure to be a hit.
MAPLE BUTTER

Preheat oven to 180°
1Mash bananas into a large bowl and add eggs, maple syrup, vanilla seeds, sour cream and melted butter. Mix until well combined.
2Sift flour and add bicarb soda, brown sugar and cinnamon in a large bowl. Add the wet ingredients to the dry and stir to combine.
3Pour mixture into a lightly greased loaf tin. If desired, peel an additional banana, cut in half length-ways and press into the top of the mixture.
4Bake for 1 hour or until cooked through.
5Allow to cool in the tin for 10 minutes before turning out onto a wire rack to cool completely.
6To make to Maple Butter, beat the butter and maple syrup together until light and fluffy.
7To serve, spread some maple butter onto freshly sliced banana bread.
