Mix until well combined. Sift flour and add bicarb soda, brown sugar and cinnamon in a large bowl. Add the wet ingredients to the dry and stir to combine. Pour mixture into a lightly greased loaf tin. If desired, peel an additional banana, cut in half length-ways and press into the top of the mixture. Bake for 1 hour or until cooked through. Allow to cool in the tin for 10 minutes before turning out onto a wire rack to cool completely. To make to Maple Butter, beat the butter and maple syrup together until light and fluffy. Preheat oven to 180°
