Preheat oven to 180˚C.
1Place chopped dates in boiling water, allow to soak until softened.
2Combine all pudding ingredients in a bowl, mix until well combined. Transfer to pudding dish or deep baking pan. Bake for about 40-50 minutes or until top springs back and skewer inserted into the centre comes out clean. Allow to rest for 5 minutes
3Meanwhile, mix sauce ingredients over medium heat on the stovetop until well combined and resembles a syrup.
Optional for a thicker sauce: reduce heat to low, combine arrowroot flour and cold water in a cup or small jug, add to the sauce. Stir well until resembling a thick sauce.
