Gluten Free ANZAC Biscuits
Optional: 1 tbs Organic Pea Protein or 1 tbs Organic Hemp Seeds

Pre-heat fan-forced oven to 170oC. Grease a large cookie sheet or baking tray with coconut oil.
1Combine dry ingredients in a mixing bowl. Add optional protein powder or hemp seeds.
2Add molasses to maple syrup in a jug or a bowl and stir until blended. Pour coconut oil and maple syrup mixture into dry ingredients. Stir with a wooden spoon until well combined.
3Scoop a tablespoon size of the biscuit mixture and gently press and round the biscuit with wet hands. Place gently onto the greased pan. Allow space between each biscuit as they will spread while cooking.
4Bake for 13 minutes, checking and turning the tray halfway, if needed. You want the biscuits to be evenly golden brown all over.
5Allow to cool completely. Store in an airtight container at room temperature or in the fridge. Store for up to 7 days.
